I really love bread. Like really.....Any kind, any time, I want it.
BBQ garlicky flat breads being one of the top favourites as you can literally eat it with ANYTHING and everything and it will make your meal 10x more enjoyable and fun to eat. You can even use it as a meal it self like I've done above.
I made a mussel flat bread with bbq leek, caramelised and picked shallot and some homemade XO sauce I had hanging around in the fridge. You can really top it with just about anything you have in the fridge and it will be delicious.
This recipe is very simple to make and only takes a few minutes to whip up so its a good one to keep handy!
Makes 6 flat breads:
5g dry yeast/ tsp baking powder
1 tsp sugar or honey
105g greek yoghurt
285g all purpose flour/ gluten free flour
90ml warm water
3 cloves garlic chopped
Start my making garlic butter. Add your chopped garlic to a pan with your butter and cook on low heat for two minutes, set aside.
For the dough mix all ingredients together on a bowl and kneed until it forms a nice smooth dough. Leave in a warm place to prove for 45 minutes.
Alternatively you can opt out the yeast, add a tsp of baking powder, mix everything and use right away. This is more like a tortilla and will have a little less puffy to it but it's just as great to use. You can also use gluten free flour if that fits your diet
Next we will roll out our dough. Divide into 6 pieces and roll into balls. Get a good amount of flour on your surface and roll out as thin as you like.
Get your bbq hot or any pan you have in your kitchen and cook each flat bread depending on the thickness but about 2 minutes each side then brushing with a generous amount of garlic butter as they come off the heat.
Enjoy as is, use as a pizza base, or eat along side any dish you want.
