Lets Talk Brownies

As a massive chocolate lover, brownies are a big part of my life and why not try and experiment and make different kinds. The classic will always be good we know! But why not try and make different/healthier/ types just as tasty! Below I've made a chocolate peanut butter, hazelnut and date brownie which is ultra gooey. It's also #vegan #glutenfree and #refinedsugarfree. I know what you might be thinking... "there is no way this is good" Oh but it is! These brownies are the type that are hard to pick up and just melt in your mouth. And are kind of healthyish?

Makes about 20 squares

What yaaaa need:

300g/ 2 cups dates pitted and chopped

235ml/ 1 cup water

125g/ 1/2 cup peanut butter

2 tbs coconut oil

35g/ 1/3 cup coda powder

75g/ 1/2 cup hazelnuts

75g/ 1/2 cup chocolate chips

1tsp baking powder

Option: add 1 or 2 scoops of favourite protein powered

Set your oven to 180c.

Blend your dates and water until smooth, then slowly add the rest of the ingredients except the chocolate chips. It might need another tbs of water if it’s still very thick, should be a normal brownie batter consistency.

Next fold in the choc chips and put your batter into a lined baking tray of choice.

Bake for 25-30 minutes!

It will still be very gooey in the middle even after baking so if your trying to judge its doneness with a tooth pick it won't work!

Let chill and enjoy

If you don't mind it not being vegan/gluten free you can add 2 eggs to the batter really whisking them before to make them nice and bubbly to achieve that crinkle top! You can also add 3 tbs of all purpose flour to help it set more giving it a bit more structure if that's the finish product your looking for.
